SALSA WITH SEARED COTIJA CHEESE
Ingredients
2 large tomatoes
4 tomatillos
2 serrano peppers
1/4 white onion
5 chile de árbol peppers
2 garlic cloves
1 1/2 Cups water
1 tsp. salt
1/2 tsp. black ground pepper
1/4 Cup cilantro, chopped
4 1/2 oz. wedge of Sierra® Cotija Cheese from V&V SUPREMO®
Method of Preparation
- In a medium pot, place the tomatoes, tomatillos, peppers, onion, garlic and water. Bring to a boil. Lower temperature to medium heat and cook for 15 minutes.
- To sear the cheese: Preheat a pan on medium heat for 2 minutes. Slice the cheese in half, lengthwise, place both halves on a pan and sear each side for 30 seconds. Once seared, cut each side lengthwise again, and then in small cubes. Set aside.
- Remove the skin from the tomatoes and the stems from the peppers. Place all ingredients in the blender. Add salt, black pepper, and blend at low speed for 30 seconds. Pour salsa into a large bowl. Mix in cilantro. Crumble approximately 3 tablespoons of the seared Cotija cheese, and stir into the salsa. Lay the rest of the cheese lengthwise on top of the salsa. Serve and enjoy with your favorite tortilla chips!
