TWO CHEESE TRIPLE BERRY SALAD
Ingredients
2 Tbsp. olive oil
1 Tbsp. balsamic vinegar
1/8 tsp. Dijon mustard
1/4 tsp. salt
1/8 tsp. ground black pepper
8 oz. Queso Blanco Cheese from V&V SUPREMO®
5 oz. spring mix
1/2 Cup blueberries, washed
1/2 Cup strawberries, washed and sliced
1/2 Cup blackberries, washed
1/4 Cup sliced almonds, toasted
3 Tbsp. Grated Sierra® Cotija Cheese from V&V SUPREMO®
Method of Preparation
- Whisk together olive oil, vinegar, mustard, salt & pepper. Set aside.
- Preheat a nonstick skillet over medium high heat for 2 minutes. Slice Queso Blanco cheese into ¼ inch thick slices.
- Place on the skillet and sear for about 1 minute on each side. Let cool for about 1 minute. Cut slices into bite size pieces. Set aside.
- Add salad greens, berries, almonds, Queso Blanco, and Cotija cheese to a salad bowl. Toss to combine. Drizzle dressing over salad and mix gently.
