Ingredients

1/2 tsp. Olive oil
1 1/2 oz. Grated Sierra® Cotija Cheese from V&V SUPREMO®
3 large eggs
1/4 tsp. ground black pepper
1/2 Tbsp. coarsely chopped fresh thyme
1 Tbsp. sliced scallion, green part only
1 tsp. chopped fresh oregano
2 oz. diced grape tomato
2 oz. Shredded Chihuahua® Quesadilla Cheese from V&V SUPREMO

Method of Preparation

  1. Brush a cold 10-inch nonstick pan with olive oil. Sprinkle Cotija cheese evenly into pan to cover completely.
  2. Place pan over medium heat for 3-4 minutes, or until cheese begins to brown. Meanwhile whisk eggs with ½ Tbsp cold water and pepper.
  3. Add eggs to pan. Turn heat to low, cover pan and cook for 1 minute.
  4. Distribute tomatoes, herbs, and Chihuahua® cheese over top. Cover and cook for 3-4 minutes, or until eggs are just cooked through, and cheese is melted. Fold in half and serve.
