SMASHED CUCUMBER AND CANTALOUPE SALAD WITH COTIJA CHEESE
Ingredients
2 Tbsp. fresh lime juice
1/2 tsp. kosher salt
6 oz. whole mini Persian cucumbers
4 oz. ripe cantaloupe, julienned on mandolin
2 Tbsp. chopped cilantro
1 oz. Grated Sierra® Cotija Cheese from V&V SUPREMO®
1 oz. toasted, salted pumpkin seeds, crushed
2 Tbsp. julienned radish
1/4 tsp. powdered ancho chile
lime wedges, for serving
Method of Preparation
- Whisk lime juice and salt in medium bowl. Set aside.
- Trim ends off cucumbers. Place cucumbers in plastic re-sealable bag. Smash several times with bottom of skillet. Chop roughly.
- Add cucumbers, cantaloupe, and cilantro to lime juice. Toss well.
- Place half of cucumber mixture on plate. Distribute half of cheese and half of seeds over mixture. Top with remaining mixture. Distribute remaining cheese and seeds over salad.
- Top with radishes, cilantro and chile. Serve with lime wedges on the side.
