CHICAGO STYLE PIZZA SAUCE WITH COTIJA
Ingredients
2 Tbsp. unsalted butter
4 oz. finely diced onion
1 1/2 tsp. tsp. minced garlic
1/4 tsp. dried oregano
28 oz. tomato puree
1 1/2 tsp. sugar
4 oz. Grated Sierra® Cotija Cheese from V&V SUPREMO®
1 Tbsp. chopped fresh basil
1 Tbsp. extra virgin olive oil
Method of Preparation
- Melt butter in a large saucepan. Add onion and cook until translucent. Stir in garlic and oregano, cook for a minute more.
- Add tomato puree, sugar and Cotija. Bring sauce to a boil, then reduce heat. Simmer for 20-30 minutes, or until the sauce has reduced by a cup.
- Stir in basil and olive oil. Serve immediately or cool down and store for a later use.
Notes
Will keep for 5 days in the refrigerator when stored in an airtight container. Yields 30 oz.
