HUEVOS RANCHEROS

Ingredients
Ranchera Sauce
2 Tbsp. corn oil
2 corn tortillas
2 large eggs
1 oz. V&V Supremo® Queso Fresco Cheese, crumbled
4 oz. Supremo® Mexican Style Crema from V&V Supremo®
1/4 oz. chopped cilantro
Method of Preparation
- Heat Ranchera sauce and keep warm.
- Place 1 tbsp. of corn oil in a large non-stick skillet over medium heat. When oil is hot, fry tortillas one at a time quickly on each side. (About 2 seconds per side). Place tortillas on paper towels.
- Turn heat to low, add the other Tbsp. of oil and fry eggs slowly until cooked sunny-side up. (About 3 minutes).
- Place 2 tortillas on each plate, overlapping them to fit on plate. Top tortillas with 2 eggs and ladle sauce over eggs and tortillas leaving just the yolks exposed. Top with queso fresco cheese, crema, and cilantro.
