SALVADORAN QUESADILLAS
Ingredients
4 oz. unsalted butter, room temperature
1 oz. unsalted butter, cold
1 Cup sugar
3 large eggs, separated
1 Cup all purpose flour
1 tsp. baking powder
8 oz. Supremo® Mexican Style Crema from V&V SUPREMO®
4 oz. Shredded Chihuahua® Quesadilla Cheese from V&V SUPREMO®
2 oz. V&V SUPREMO® Queso Fresco Cheese, crumbled
1 oz. Grated Sierra® Cotija Cheese from V&V SUPREMO®
1/4 Cup sesame seeds
Method of Preparation
- Preheat oven to 350 degrees.
- Butter an 8″ x 8″ glass baking dish with the cold butter.
- Sift flour and baking powder in a bowl.
- Place soft butter in mixer, using the flat paddle, beat until creamy, about 2 minutes. Add sugar and beat for 2 more minutes.
- Add yolks, beat until well incorporate, about 2 minutes.
- Turn mixer to low. Add a 1/3 of the sifted flour and baking powder. Keep mixing, add a 1/3 of the cream. Continue this process, finishing with the sour cream. Mix for one minute. Turn mixer off and push batter down with rubber spatula. Mix another minute.
- Add all cheese. Mix for 2 minutes.
- Place batter in a large bowl. Clean mixer bowl. In mixer bowl, using the wire whisk, beat egg whites until they form stiff peaks.
- Fold egg whites into batter with spatula 1/3 at a time.
- Pour batter into baking dish. Place baking dish on a sheet tray, sprinkle sesame seeds on top. Bake in oven for 45 minutes. Remove sheet tray and bake additional 15 minutes.
Notes
TIP: When whipping egg whites always make sure that all equipment is very clean and dry. Also ensure that none of the yolk is present, as this will prevent success.
