CHORIZO AND EGGS

Ingredients
8 large eggs
4 oz. Supremo® Mexican Style Crema from V&V SUPREMO®
7 oz. Supremo® Pork Chorizo from V&V SUPREMO®
4 oz. Shredded Chihuahua® Quesadilla Cheese from V&V SUPREMO®
2 oz. V&V SUPREMO® Queso Fresco Cheese
Corn (gluten free) or flour tortillas, for serving
1 1/2 Cups pico de gallo
Method of Preparation
- Pre-heat a non-stick skillet over medium heat. Add chorizo and break up with a spoon as it cooks, about 10 minutes. Set aside.
- Add eggs and sour cream to a medium bowl. Whisk until thoroughly combined.
- Place skillet with cooked chorizo over high heat for 1 minute. Add eggs and Chihuahua® cheese. Stir eggs constantly until set.
- Serve eggs with warmed tortillas, pico de gallo, and Queso Fresco.
