MEATBALLS WITH CHORIZO

Ingredients
2 slices stale bread, finely diced
4 oz. Supremo® Mexican Style Crema from V&V SUPREMO®
1 lb. ground beef sirloin
6 oz. Supremo® Pork Chorizo from V&V SUPREMO®
1 oz. Grated Sierra® Cotija Cheese from V&V SUPREMO®
4 tsp. fresh mint, chopped
1 large egg
1 Tbsp. dried oregano
1 tsp. ground black pepper
1/2 tsp. salt or to taste
8 oz. V&V SUPREMO® Queso Fresco Cheese
4 Cups salsa of your choice
Method of Preparation
- Mix bread and cream in bowl, let stand for 15 minutes.
- Mix all meatball ingredients except for Queso Fresco and salsa.
- Dice Queso Fresco cheese into half-inch cubes.
- Form meatballs around cubes of cheese, making each ball about 2 ounces.
- Place large non-stick skillet over medium heat for 3 minutes. Brown meatballs for about 1 minute on each side.
- Meanwhile, place a large saucepan over medium heat. Add salsa. Cover and bring to a boil, about 15 minutes.
- Place meatballs in the sauce, turn heat to low, cover pan and simmer for 20 minutes.
- Serve meatballs with salsa and a sprinkle of Cotija.
