CHORIZO BOLOGNESE
Ingredients
14 oz. V&V Supremo® Pork Chorizo
4 oz. finely diced onion
1 1/2 tsp. minced garlic
2 tsp. dried oregano
28 oz. tomato puree
1/2 tsp. sugar
1 Tbsp. salt, to taste
chopped fresh basil, for garnish
Method of Preparation
- Heat a large saucepan over medium-low heat. Add chorizo and cook for 5 minutes. Use a spoon to break up while its cooking.
- Add onions and cook until translucent, about 5 minutes. Add garlic and oregano, cook for 1 more minute, stirring constantly. Deglaze pan with red wine.
- Add tomato puree and sugar. Bring sauce to a boil, then reduce heat. Simmer for 20-30 minutes, or until the sauce has reduced by a cup. Taste sauce and adjust seasoning accordingly. Stir in basil.
Notes
Yields 32 oz.
Will keep for 5 days in the refrigerator when stored in an airtight container.
