Ingredients

7 oz. Supremo® Pork Chorizo from V&V SUPREMO®
7 large eggs, beaten
1 Cup cooked, diced (1/2 inch) potatoes
1/2 Cup diced green onions
1/2 Cup diced red bell peppers
1/2 Tbsp. olive oil
2 oz. Grated Sierra® Cotija Cheese from V&V SUPREMO®
Supremo® Mexican Style Crema from V&V SUPREMO® , for serving

Method of Preparation

  1. Preheat oven to 400 degrees.
  2. Break eggs into a bowl and whisk together.
  3. Place an 8 inch, non-stick oven proof skillet over medium heat. Cook chorizo, breaking up meat with a spoon for 10 minutes. Add potatoes and cook for 1 minute. Add onions, peppers and olive oil. Cook for 2 minutes. Add egg mixture, and allow to cook for 30 seconds without stirring.
  4. Afterwards, stir mixture with a rubber spatula, every 30 seconds for 3 minutes. Smooth the top of the mixture after each stir.
  5. Sprinkle cotija cheese over top of eggs. Place skillet in oven on top rack for 15 minutes, or until eggs are set.
  6. Remove from oven and let rest for 5 minutes.
  7. Flip fritatta on to a cutting board and slice into 6 pieces.
  8. To Serve: Serve hot or room temperature. Top with sour cream. Accompany with salad and tortillas if desired.
