CHORIZO FRITTATA
Ingredients
7 oz. Supremo® Pork Chorizo from V&V SUPREMO®
7 large eggs, beaten
1 Cup cooked, diced (1/2 inch) potatoes
1/2 Cup diced green onions
1/2 Cup diced red bell peppers
1/2 Tbsp. olive oil
2 oz. Grated Sierra® Cotija Cheese from V&V SUPREMO®
Supremo® Mexican Style Crema from V&V SUPREMO® , for serving
Method of Preparation
- Preheat oven to 400 degrees.
- Break eggs into a bowl and whisk together.
- Place an 8 inch, non-stick oven proof skillet over medium heat. Cook chorizo, breaking up meat with a spoon for 10 minutes. Add potatoes and cook for 1 minute. Add onions, peppers and olive oil. Cook for 2 minutes. Add egg mixture, and allow to cook for 30 seconds without stirring.
- Afterwards, stir mixture with a rubber spatula, every 30 seconds for 3 minutes. Smooth the top of the mixture after each stir.
- Sprinkle cotija cheese over top of eggs. Place skillet in oven on top rack for 15 minutes, or until eggs are set.
- Remove from oven and let rest for 5 minutes.
- Flip fritatta on to a cutting board and slice into 6 pieces.
- To Serve: Serve hot or room temperature. Top with sour cream. Accompany with salad and tortillas if desired.
