CHORIZO RICE BOWL

Ingredients
6 oz. cooked white rice
2 1/2 oz. roasted corn kernels
2 1/2 roasted green bell peppers strips
5 slices avocado, tossed in seasoned lime juice
2 oz. shredded romaine hearts
1 1/2 oz. pico de gallo
1 1/2 oz. V&V Supremo® Queso Fresco Crumbles
3 1/2 oz. V&V Supremo® Pre-Cooked Pork Chorizo Crumbles, reheated
3 cilantro sprigs
1 Tbsp. thinly sliced scallions
Notes
To build rice bowl:
- Scoop rice on the bottom of a large bowl
- Place corn, beans, and pepper strips on one side.
- Arrange avocado, romaine hearts, pico de gallo, and queso fresco on the other side.
- Top with chorizo and garnish with cilantro and scallions.
