CLASSIC CHORIZO & EGGS
Ingredients
3 large eggs
2 V&V Supremo® Pre-Cooked Pork Chorizo Crumble
3 scallions
1 Tbsp. unsalted butter
corn tortillas
salsa of your choice

Method of Preparation
- Finely chop one scallion.
- Grill the remaining two scallions.
- Whisk the eggs and previously chopped scallion together in a small bowl.
- Preheat a non-stick skillet over medium heat for 1 minute. Add butter-when melted, add chorizo. Stir for 30 seconds.
- Add the egg mixture to the skillet. Cook, stirring occasionally, until eggs are set to your liking.
- Serve with grilled scallions, warm tortillas, and salsa on the side.
