Ingredients

FOR THE SALAD

2 Tbsp. fresh lime juice
3/4 tsp. salt
15 oz. Supremo® Mexican Style Crema from V&V SUPREMO®
1/2 Cup chopped fresh dill
1/2 large sweet onion, sliced thin
2 seedless cucumbers, sliced in thin "half moons"
4 oz. piece Sierra® Cotija Cheese from V&V SUPREMO®, shaved

FOR THE PITA BREAD

2 pieces pita bread
1 large garlic clove, creamed
2 Tbsp. olive oil
1 pinch kosher salt, or to taste

Method of Preparation

  1. In a medium bowl whisk together lime juice, salt, and black pepper until salt dissolves. Add sour cream and dill.
  2. Mix well.
  3. Add onions and cucumbers. Mix together.
  4. Mix in half of the shaved Cotija Cheese.
  5. Preheat a skillet or griddle over medium heat for 1 minute.
  6. In a small bowl, combine garlic and olive oil. Whisk together.
  7. Spread pita bread with olive oil. Warm pita bread on the griddle for 30 seconds on each side. Cut each pita into 4 pieces.
  8. Divide the salad into 8 portions. Garnish each salad with the remaining Cotija Cheese. Accompany with pita bread on the side.
