CUCUMBER SALAD WITH DILL
Ingredients
FOR THE SALAD
2 Tbsp. fresh lime juice
3/4 tsp. salt
15 oz. Supremo® Mexican Style Crema from V&V SUPREMO®
1/2 Cup chopped fresh dill
1/2 large sweet onion, sliced thin
2 seedless cucumbers, sliced in thin "half moons"
4 oz. piece Sierra® Cotija Cheese from V&V SUPREMO®, shaved
FOR THE PITA BREAD
2 pieces pita bread
1 large garlic clove, creamed
2 Tbsp. olive oil
1 pinch kosher salt, or to taste
Method of Preparation
- In a medium bowl whisk together lime juice, salt, and black pepper until salt dissolves. Add sour cream and dill.
- Mix well.
- Add onions and cucumbers. Mix together.
- Mix in half of the shaved Cotija Cheese.
- Preheat a skillet or griddle over medium heat for 1 minute.
- In a small bowl, combine garlic and olive oil. Whisk together.
- Spread pita bread with olive oil. Warm pita bread on the griddle for 30 seconds on each side. Cut each pita into 4 pieces.
- Divide the salad into 8 portions. Garnish each salad with the remaining Cotija Cheese. Accompany with pita bread on the side.
