FRENCH ONION GRILLED CHEESE
Ingredients
FOR THE ONIONS
1 Tbsp. clarified butter
1 large Spanish onion, thinly sliced
black pepper, to taste
1/2 tsp. chopped fresh thyme
FOR THE SANDWICH
2 slices sour dough bread
3 slices of Chihuahua® Quesadilla Cheese from V&V SUPREMO®
1 oz. (or 2 Tbsp.) caramelized onions
Method of Preparation
- To caramelize the onions: melt clarified butter in a large sauté pan over low heat. Cook onions, stirring occasionally, for 30-45 minutes, or until onions are soft and deep golden brown.
- Season onions to taste with black pepper and thyme.
- To make the sandwich: toast 2 pieces of sour dough bread on a dry griddle over medium heat until lightly browned. Flip bread and place 2 slices of cheese onto 1 piece of bread. Place the remaining slice of cheese on the other piece of bread.
- Toast bread until cheese is softened and begins to melt. Add caramelized onions to the piece of bread with the 2 slices of cheese. Combine both pieces of bread.
- Cook both sides of the sandwich until cheese is fully melted and bread is golden brown.
- Cut sandwich in half and serve.
