GARLIC ROASTED POTATOES WITH COTIJA
Ingredients
1 lb. red potatoes, cut into sixths
3 tsp. minced garlic
1/4 Cup olive oil
1/4 tsp. dried oregano
1/8 tsp. red pepper flakes
1/2 tsp. dried rosemary
2 oz. Grated Sierra® Cotija Cheese from V&V SUPREMO®
1/8 tsp. ground black pepper
1/8 tsp. kosher salt
1 Tbsp. chopped fresh parsley
Method of Preparation
- Pre-heat oven to 400°F.
- In a medium bowl combine potato wedges, garlic, 3 Tbsp. olive oil, oregano, red pepper flakes, rosemary, 1 oz. Cotija cheese, black pepper, and salt.
- Toss all ingredients in the bowl and transfer seasoned potatoes onto a sheet tray. Scrape the bowl and add remaining ingredients on top of the potatoes. Roast potatoes for 18 minutes.
- Remove from oven. Drizzle 1 Tbsp. of olive oil, 1 oz. Cotija cheese, and parsley on top of the potatoes. Toss to coat. Place potatoes back into the oven for 2 minutes. Serve warm.
