MARINARA SAUCE WITH COTIJA

Method of Preparation
- Heat oil in medium saucepan over medium heat. Add garlic and cook, stirring for 2 minutes. Add pepper flakes and cook for 1 minute. Add tomatoes, oregano, rosemary, black pepper, sugar, and kosher salt.
- Cook, stirring occasionally, for 15-20 minutes. Stir in basil, and remove from heat. Divide into 4 portions and ladle into serving bowls. Top each portion with 1 oz. Cotija.
