Ingredients

1/2 Cup diced jarred nopales (drained, rinsed, and patted dry)
1/4 Cup chopped red onion
1 Roma tomato, seeded and chopped
2 Tbsp. chopped cilantro
1/4 tsp. chopped jalapeño
1/8 tsp. dried oregano
1/2 tsp. olive oil
1/2 tsp. lime juice
1/8 tsp. ground black pepper
1/8 tsp. kosher salt
4 corn tortillas
4 oz. Shredded Chihuahua® Quesadilla Cheese or Oaxaca Cheese from V&V SUPREMO®

Method of Preparation

  1. Add nopales, red onion, tomato, cilantro, jalapeño pepper, oregano, olive oil, lime juice, salt, and pepper to a medium bowl. Stir until well combined.
  2. Preheat a skillet for 1 minute over medium-low heat. It is important that the temperature is not too high so that the tortillas do not harden or overcook before the cheese fully melts.
  3. Warm tortillas for 1 minute on one side, flip, and add 1 oz. of cheese to one of the tortillas. Add half of the nopal mixture and an additional 1 oz. of cheese on top of the mixture. Top with another tortilla and press gently with a spatula. Flip occasionally until quesadilla is golden brown on each side and cheese is melted. Repeat with remaining ingredients.
