PLANTAINS WITH CREAM AND FRESH CHEESE
Ingredients
2 large, ripe (blackened) plantains
15 oz. Supremo® Mexican Style Crema from V&V SUPREMO®
2 oz. V&V SUPREMO® Queso Fresco Cheese
3/4 Cup roasted pecans, coarsely chopped
1/2 tsp. cinnamon, ground
4 Tbsp. unsalted butter
3 Tbsp. sugar
1/2 tsp. vanilla extract
Method of Preparation
- In a bowl whisk sour cream, 2 Tbsp. of sugar, cinnamon and vanilla together.
- Peel plantains, and cut at an angle into ½ inch thick slices ( approximately)
- Place a large skillet over medium heat. Add butter. Let it melt. Add plantain slices, and fry them until golden brown on one side, sprinkle with remaining sugar, turn them over and fry other side for about 2-3 minutes or until golden brown.
Notes
SERVING: Arrange plantains on four plates. Drizzle with sour cream mixture. Sprinkle cheese, and toasted nuts on top.
