ROASTED POBLANO CREAM SAUCE
Method of Preparation
- Add vegetable oil to a saucepan and sweat aromatics over medium heat.
- Add sour cream, poblano peppers, and salt. Simmer for 2 minutes.
- Carefully place mixture in blender. Remove center of lid from blender and place a towel over the top to allow steam to escape. Blend on high for 1 minute.
- Add cilantro and blend for 1 more minute, or until mixture is homogeneous.
- Return sauce to saucepan and keep warm for service.
Notes
Yields 40 oz. of sauce.
