SPINACH TACOS WITH SEARED QUESO BLANCO
INGREDIENTS
2 Tbsp. olive oil
6 large cloves of garlic, minced
1 pinch of crushed red pepper
10 oz. pre-washed baby spinach
1/4 tsp. salt
1/8 tsp. ground black pepper
1/2 tsp. lime juice
8 oz. Queso Blanco Cheese from V&V SUPREMO®, sliced into 8 pieces
8 corn (gluten free) or flour tortillas
Method of Preparation
- Place a large skillet over medium-high heat for one minute. Add the oil, garlic and red pepper. Stir for 45 seconds.
- Add the spinach and cover. Turn the heat down to medium-low and keep the cover on for about a minute or so. Remove the lid, turn heat to medium-high. Add the salt and pepper and stir. Remove from heat and add lime juice.
- Place a nonstick pan over medium heat for 2 minutes. Place the slices of cheese to sear for about 1 minute on each side, or until browned. Heat tortillas and make tacos with cheese and spinach.
