Try this simple, cheesy and creamy dip for your next get together. Warning: Your guests will be asking for more 2 Cheese Hot Corn Dip!
Ingredients
- 1 (12 oz.) frozen corn, thaw
- 1 (4.5 oz) can mild green chiles, chopped
- 1 whole chipotle pepper in adobo sauce, seeds removed and finely chopped
- 1 tsp adobo sauce
- 2 green onions, chopped
- 1 roma tomato, seeded diced
- 2 Tbsp fresh chopped cilantro, reserve 1 Tbsp. for garnish
- ¼ tsp ground black pepper
- ½ tsp garlic powder
- 1 cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®, reserve ¼ cup for topping
- 2 cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®, reserve ½ cup for topping
- 1 cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
4 Steps to complete
- 1Preheat oven to 350 degrees
- 2In a large bowl, combine, corn, green chiles, chipotle pepper, adobo sauce, tomatoes, green onions, black pepper, garlic powder, cheese and sour cream.
- 3Spread the mixture into a baking dish. Mix the cheeses that were reserved and sprinkle on top.
- 4Place into the oven, bake uncovered for about 20-25 minutes until hot and bubbly. Top with cilantro. Serve with tortilla chips and enjoy!
