Ingredients
- ¼ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
- 2¼ cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
- 4 oz. V&V SUPREMO® Brand Queso Fresco Cheese
- 2 Tbsp. Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
- ¼ tsp. onion powder
- ⅛ tsp. garlic powder
- ¼ tsp. smoked paprika
- ⅛ tsp. cayenne pepper
- ⅛ tsp. ground black pepper
- 2 Tbsp. cilantro, finely chopped
- 1 Tbsp. green onion, finely chopped
- 12 large jalapeño peppers
- 12 slices bacon, cut in half lengthwise
7 Steps to complete
- 1Pre-heat oven to 400F in a conventional oven.
- 2Using a food processor, blend Cotija cheese, ¼ cup Chihuahua® cheese, Queso Fresco, sour cream, onion powder, garlic powder, smoked paprika, cayenne pepper, and black pepper for 2 minutes.
- 3Transfer cheese mixture to a bowl and add cilantro, green onion, and ¾ cup Chihuahua® cheese and mix until combined.
- 4Cut ¼ of each pepper off lengthwise and scoop out the seeds and veins, set aside.
- 5Stuff each pepper with a spoonful (1½ Tbsp.) of the filling. Using remaining Chihuahua® cheese, top each pepper with about 1½ Tbsp.
- 6Wrap 2 strips of bacon around each pepper and use a toothpick if needed to ensure bacon stays in place.
- 7Bake peppers on a rack atop a baking sheet for 20 minutes. Serve and enjoy!
