While alphabet soup is a classic for kids, this version boosts up the flavor with our sour cream and fresh cheese. Delicious.
Ingredients
- ½ box (6 oz.) alphabet pasta
- ½ cup onion, diced
- 2 cloves garlic, minced
- 1 Tbsp. corn oil
- ½ tsp. dried oregano
- 1 dash fresh ground black pepper
- 1 can (28 oz.) whole tomatoes
- 3 cups chicken broth
- salt to taste
- 1 cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
- 1 cup V&V SUPREMO® Brand Queso Fresco Cheese , crumbled
5 Steps to complete
- 1Cook pasta according to package instructions. Drain and reserve.
- 2Place saucepan over medium heat for 1 minute. Add oil. After one more minute, add onions. And saute for 3 minutes, stirring. Add garlic cook for 1 minute. Remove saucepan from heat.
- 3Place tomatoes, oregano, and chicken broth in the blender. Blend well.
- 4Pour tomato puree into the onions. Place mixture on medium heat. Bring puree to boil. Reduce heat to low, and simmer for 2 minutes, stirring occasionally. Add pasta, salt and pepper to taste.
- 5Ladle soup and top with sour cream and cheese.
