Ingredients
- 2 Tbsp. olive oil
- 6 large garlic cloves, minced
- ⅛ tsp. crushed red pepper (optional)
- 1 (10 oz.) bag of pre-washed baby spinach
- ¼ tsp. salt
- ⅛ tsp. fresh ground black pepper
- ½ tsp. lime juice
- 1 (8 oz.) pkg. V&V SUPREMO® Brand Queso Asadero Cheese, sliced into 8 pieces
- 8 corn or flour tortillas
6 Steps to complete
- 1Preheat a medium pan over medium-high heat for one minute.
- 2Add oil, garlic and red pepper and sauté for 45 seconds.
- 3Add the spinach, mix well with garlic, and cover the pan. Turn the heat down to medium-low and cook for 1 minute.
- 4Remove the lid. Add salt, black pepper and mix. Place the spinach in a bowl, add lime juice and mix again.
- 5Preheat a nonstick pan or griddle over medium heat for 2 minutes. Sear Asadero cheese for 30 seconds on each side or until golden brown.
- 6Heat tortillas for 1 minute on each side. Assemble the tacos with the spinach and seared cheese. Serve and enjoy!
