½ Tbsp olive oil

1 (8.25 oz.) can whole kernel corn, drained and pat dry

1 Tbsp. fresh lime juice, divided

¼ tsp. ground cayenne red pepper

¼ tsp. smoked paprika
-
¼ tsp. + ⅛ tsp. kosher salt, divided
-
⅛ tsp. ground black pepper
-
¼ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
-
6 slices sour dough bread, toasted

1 small avocado
-
½ cup V&V SUPREMO® Brand Queso Fresco Cheese, crumbled

1 Tbsp. fresh cilantro, chopped

1Preheat oil in large nonstick skillet for 2 minutes over medium high heat. Add corn and sauté for 4 to 5 minutes or until corn starts to brown slightly. Transfer corn to a bowl. Add ½ tablespoon lime juice, chili powder, paprika, salt, pepper, and Cotija cheese. Mix to combine. Divide mixture into 6 portions. Set aside until needed.

2In a small bowl; mash avocado, add remaining ½ tablespoon lime juice, and remaining ⅛ teaspoon salt.

3Evenly spread 1½ tablespoons avocado mixture across each slice of toast. Top with 1 portion corn mixture and crumbled queso fresco. Garnish with cilantro and lime wedges on the side. Serve Avocado Toast with Roasted Corn and enjoy!
