2 Tbsp unsalted butter

¼ cup olive oil

3 cloves garlic, minced

2 Tbsp lemon juice

1 Tbsp honey
-
¼ tsp Kosher salt

⅛ tsp ground black pepper

2 Tbsp flat parsley, finely chopped

6 medium red potatoes

¼ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO® Sour Cream Sauce:

1Preheat oven to 375°F

2In a bowl; combine butter, oil, garlic, lemon, honey, salt, and pepper. Microwave for 30 seconds or until butter is melted. Whisk in parsley and set aside until needed.

3Place 2 rubber spatulas on each side of the potatoes; cut thin slices of the potato crosswise using the spatulas as a guide to make sure that the bottom of the potatoes remain intact.

4Place scored potatoes in a baking dish and brush with the butter mixture. Make sure to brush inside the slits of the potatoes. Save some for basting. Cover with foil and bake potatoes for 45 minutes.

5While the potatoes are baking; combine sour cream, lemon juice, green onion, parsley, pepper, and salt in a small bowl. Stir to combine and set aside until needed.

6Remove potatoes from the oven. Using a spoon, gently open each slit to baste with remaining oil. Sprinkle Cotija cheese in between the slits. Place potatoes back in the oven uncovered and continue to bake for 15 minutes.

7Serve Baked Accordion Potatoes with Sour Cream Sauce and enjoy!
