These delicious beans with cream and cheese will be the hero at your table as a side dish or dip. Serve at any occasion.
Ingredients
- 4 cups cooked pinto beans with broth
- 1 cup Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
- 15 oz remo® Brand Mexican Sour Cream from V&V SUPREMO®
- 2 tsp. ground ancho chile
- ½ cup Queso Fresco Cheese From V&V SUPREMO®, crumbled
- ¼ cup chopped, cilantro
- salt to taste
4 Steps to complete
- 1Strain beans and reserve the broth.
- 2Place beans in a saucepan over medium heat. Mash beans with potato masher. Add half of the bean broth.
- 3Add ground ancho chile, sour cream and cheese. Continue to mash and stir until the mixture is creamy. If it’s too dry, add more bean broth. Add salt to taste.
- 4Place beans in a serving bowl, and garnish with fresh cheese and cilantro.
