4 cups black beans ...See recipe or canned black beans of your choice (divided)

3 cups chicken or vegetable broth (divided)

2 Tbsp. chipotle peppers in adobo sauce + 1 whole pepper

1 link from (14 oz.) pkg. Supremo® Brand Pork Chorizo from V&V SUPREMO®

¼ cup white onion, chopped

2 cloves of garlic, finely chopped

1 cup tomatoes, deseeded and diced

1Add 1½ cups black beans, 1½ cups chicken broth, adobo sauce and chipotle pepper to a blender. Blend until smooth.

2Preheat a skillet over medium heat for 1 minute. Add chorizo and cook for 2 minutes. Mix in onions and cook for 1 minute. Add garlic and cook for 30 seconds, add diced tomatoes and cook for 2-3 minutes. Strain the contents of the blender over the pot, add remaining chicken broth and beans. Bring to a boil over medium-high heat for a few minutes. Reduce to a simmer for 5-7 minutes or until mixture thickens a bit. It should reduce slightly. Be sure to stir frequently so the beans don't stick to the bottom of the pot.

3Ladle into soup bowls. Garnish with a spoonful of Crema Supremo®, crumbled Queso Fresco, scallions and avocado. Enjoy!
