Our Breakfast Tacos are a fun way to get your morning stretch with melted Chihuahua® Cheese! Pork Chorizo from V&V Supremo® and scrambled eggs are wrapped in delicious melted cheese and a golden tortilla.

4 large eggs

½ link from (14 oz.) pkg. Supremo® Brand Pork Chorizo from V&V SUPREMO®

4 (6-inch) flour tortillas
-
1¼ cup Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®, divided

Salsa of your choice (optional)

1Crack eggs into a large bowl and whisk until smooth. Preheat a skillet for 2 minutes over medium heat. Remove the plastic casing from Chorizo and cook for 5 to 7 minutes, crumbling with a spoon while cooking.

2Pour eggs into skillet and cook for 2 to 3 minutes, while pushing eggs towards the center of the skillet until edges of the eggs begin to set. Flip eggs and cook for an addtional 1 to 2 minutes or until fully cooked. Divide into 4 equal portions and keep warm until needed.

3Preheat a griddle for 1 minute over medium heat. Warm tortillas for 15 seconds on each side. Evenly top each tortilla with ¼ cup Chihuahua® Cheese and cook for 1 minute or until cheese begins to melt. Add 1 portion of Chorizo eggs to each taco and fold tortillas over. Toast tacos an additional 15 to 30 seconds or until golden.

4Place tacos on a plate. Top each taco with 1 additional tablespoon of Chihuahua® Cheese. Serve Breakfast Tacos with your favorite salsa & enjoy!
