Add butter to the skillet, once melted, add sliced apple and cook for 5-6 minutes. Mix in brown sugar and cook for 1 minute. Mix in pecans and cinnamon, then continue to cook for 1 minute. Divide mixture into 2 portions and set aside.

Preheat a skillet or pan for 1 minute over medium-low heat. The temperature of the skillet is important so that the tortillas do not harden or overcook before the cheese fully melts. Heat tortillas for 30 seconds on one side and flip. Add ¼ cup of cheese, half of the apple mixture, add ¼ cup of cheese on top of the apple mixture. Top with the other tortilla. Cook until the cheese is melted and the tortillas are golden brown on each side (about 1½ minutes per side).

Warm caramel sauce in the microwave for 1 minute. Cut quesadilla into quarters, drizzle with caramel sauce, and sour cream on top. Enjoy!
