Busy day? Prepare this easy and delicious Cheesy Onion Soup, topped with toasted baguette and melted Chihuahua® Cheese!
Ingredients

2 Tbsp. extra-virgin olive oil

3 Tbsp. unsalted butter

3 medium yellow, thinly sliced into half-moon

1 tsp. Kosher salt or to taste

½ tsp. ground black pepper

1 tsp. fresh thyme, chopped

½ cup dry sherry cooking wine

6 cups beef stock
-
1 dried bay leaf
-
4 slices baguette, toasted

2 cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
3 Steps to complete

1Preheat a large pot for 2 minutes over medium- high heat, then add oil and butter. Once the butter has melted, add sliced onions, salt, pepper and thyme. Cook for 20 to 25 minutes, stirring occasionally until the onions are tender and caramelized. Add sherry wine to deglaze the pan. Add beef stock and bay leaf. Bring to a boil, then reduce the heat to medium- low. Cover the pot and continue simmering for 15 to 20 minutes.

2Preheat oven broiler.

3Arrange 4 oven-safe bowls on a baking sheet. Ladle soup into bowls, top with 1 slice of toasted baguette and add ½ cup Shredded Chihuahua® Cheese. Broil for 2 to 3 minutes, or until cheese is golden and bubbly. Remove from the oven with caution. Serve and enjoy!
