The cuisine of Yucatan, Mexico includes exotic spices and traditional cooking methods. Our Chicken Pibil Tacos combine the sweet spicy flavor of achiote paste, crisp pickled onions, and crumbled Queso Fresco Cheese from V&V Supremo®.
Ingredients

1 cup V&V SUPREMO® Brand Queso Fresco Cheese

1 Tbsp. achiote paste

1 tsp. dry Mexican oregano

¼ cup orange juice
-
1 cup canned enchilada sauce

2 cups rotisserie chicken, shredded

⅛ tsp. Kosher salt

8 corn or flour tortillas, warmed

1 cup Pickled Onions ...see recipe

8 sprigs fresh cilantro

1Over a bowl; crumble Queso Fresco Cheese and set aside until needed.

2In a small food processor; combine achiote paste, oregano, orange juice, and enchilada sauce. Process on high speed for 30 seconds to 1 minute or until paste has dissolved completely.

3Pour sauce in a heavy bottom pan. Heat sauce for 2 to 3 minutes over medium-high heat or until sauce has thickened slightly. Add chicken, salt, and toss to coat. Reduce heat to medium-low and simmer for 2 to 3 minutes or until chicken is warmed through.

4Fill each tortilla with ¼ cup chicken. Top with 2 tablespoons Queso Fresco Cheese, pickled onions, and cilantro. Serve Chicken Pibil Tacos & enjoy!
