Ingredients
- ¾ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
- ¼ cup unsalted chicken stock
- ¼ cup canned chipotle salsa
- 1 cup Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®
- 2 cloves garlic
- 1 lb. boneless chicken thighs, butterflied
- ¼ tsp. Kosher salt
- ¼ tsp. ground black pepper
- ¼ tsp. garlic powder
- 1 Tbsp. vegetable oil
- ½ medium white onion, thin half-moon slices
- 2 Tbsp. fresh cilantro, rough chop

- 1In a blender; combine Sour Cream, chicken stock, chipotle salsa, Chihuahua® Cheese, and garlic. Blend for 30 seconds to 1 minute or until smooth and set aside until needed.
- 2On a tray or clean work surface; season chicken thighs on both sides with salt, pepper, and garlic powder.
- 3Preheat oil in a cast iron skillet for 2 minutes over medium-high heat. Add chicken and cook for 3 to 5 minutes on each side. Add onion to the pan and sauté for 2 to 3 minutes or until onions are lightly browned. Add blended sauce, and simmer for 8 to 10 minutes or until chicken reaches an internal temperature of 165F.
