Ingredients
- 2 ripe, medium sized avocados, peeled, pitted
- 1 small seedless cucumber with peel-chopped
- ½ cup cilantro, chopped
- 1 cup fresh spinach, chopped
- 3 Tbsp. lime juice
- 1 jalapeño pepper, chopped
- 4 green onions, chopped
- 2 cups cold water
- 1 cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
- 1 cup pico de gallo
- salt to taste
4 Steps to complete
- 1Place the first 8 ingredients in blender. Blend well.
- 2Place the puree into a bowl and whisk in sour cream. Whisk in salt to taste.
- 3Chill the soup in the fridge for at least 2 hours before serving.
- 4Serve and garnish with pico de gallo. Enjoy!
