    In a food processor or blender, combine all of the ingredients except avocado oil. Process until smooth. Slowly add the avocado oil in a thin steady stream while food the processor is running. Blend until slightly thickened.

    Taste sauce and season with additional salt and pepper as desired. Pour sauce into a bowl; add Cotija Cheese and mix well until combined. Let stand for at least 20 minutes before serving. Enjoy!
