    Preheat oil in a cast iron skillet for 2 minutes over medium heat. Add onion and sauté for 1 to 2 minutes. Add pineapple, mango, and continue to cook for an additional 3 to 4 minutes. Mix in salt, garlic powder, and chipotle sauce. Cook for 1 to 2 minutes or until fruits have absorbed pan juices. Remove from heat and mix in cilantro. Divide into 4 portions and set aside until needed.

    Preheat a nonstick griddle or comal for 2 minutes over medium-low heat. It’s important that the skillet temperature is not too high, so that the tortillas do not harden or overcook before the cheese fully melts. Heat tortilla for 15 seconds. Flip tortilla and add ¼ cup Chihuahua® Cheese. Add 1 portion Chipotle Fruit mixture and top with an additional tablespoon Cheese. Fold tortilla in half. Cook quesadilla for 2 to 3 minutes or until cheese is melted and the tortilla is golden brown. Flip as needed while cooking to avoid burning. Repeat for remaining ingredients. Serve and enjoy!
