In honor of National Quesadilla Day, September 25th, this week we will share our favorite recipes to make quesadillas. Chorizo and Poblano Quesadillas, this flavorful combination is a classic one; combined with Chihuahua® brand quesadilla cheese, the result: an authentic and delicious quesadilla.
Ingredients

1 link from (14 oz.) pkg. Supremo® Brand Pork Chorizo from V&V SUPREMO®

¼ cup white onion, diced

1 clove garlic, minced

4 flour tortillas (6-inch)

1 poblano pepper, roasted, peeled, sliced into strips

1 cup Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®

1Preheat medium skillet for 1 minute over medium heat. Cook Chorizo for 4 to 5 minutes, crumbling with a spoon while cooking. Mix in onion and garlic. Continue to cook for an additional 3 minutes. Remove Chorizo from skillet. Divide into 4 portions. Keep warm until needed.

2Preheat a nonstick griddle for 2 minutes over medium-low heat. It’s important that the skillet temperature is not too high, so that the tortillas do not harden or overcook before the cheese fully melts. Heat tortilla for 30 seconds. Flip tortilla and add ¼ cup Chihuahua® Cheese. Add 1 portion of chorizo and poblano pepper strips. Fold tortilla in half. Cook quesadilla for 2 to 3 minutes or until cheese is melted and the tortilla is golden brown. Flip quesadilla as needed while cooking to avoid burning. Repeat for remaining ingredients. Serve and enjoy!
