Ingredients

1 link from 14 oz. Supremo® Brand Pork Chorizo from V&V SUPREMO®

2 garlic cloves, minced

¼ cup white onion, diced
-
½ cup refried pinto beans
-
2 cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®, divided
-
4 10-inch flour tortillas
-
1 plum tomato, seeded cut into small dice
-
1 Tbsp. green onion, finely chopped
-
1 Tbsp. fresh cilantro, finely chopped
-
⅛ tsp kosher salt
-
⅛ tsp ground black pepper

¼ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
7 Steps to complete

1Preheat oven to 375°F. Generously spray a 24 small-size muffin pan with cooking spray; set aside.

2Cut tortillas into 24 circles using a 3-inch round cookie or biscuit cutter. Press tortilla rounds into muffin pans to create a cup, and set aside.

3Remove the plastic casing from the chorizo.

4In a medium skillet over medium-high heat, cook chorizo for 8 minutes. Add onion and garlic and continue to cook for 1 minute. Mix in beans.

5Fill each tortilla cup with about ½ Tbsp. of cheese, ½ Tbsp. of chorizo and beans mixture. Top with ½ Tbsp. of cheese over the chorizo. Bake for 15 minutes.

6In a small bowl, combine, tomato, onion, cilantro, season with salt and pepper. Set aside.

7Remove chorizo cups from the oven and let cool slightly. Top each cup with sour cream and tomato mixture. Serve and enjoy!
