Ingredients

1 link from (14 oz.) pkg Supremo® Brand Pork or Beef Chorizo from V&V SUPREMO®

1 cup white onion, diced

2 garlic cloves, finely diced
-
2 (15.5oz.) cans cannellini beans, drained
-
2 (14.5oz.) cans petite-diced tomatoes with chilies
-
1½ cups vegetable stock
-
1/8 tsp salt
-
1 bay leave
-
1 (4.5 oz.) Wedge Sierra® Brand Cotija Cheese from V&V SUPREMO®
-
½ cup Supremo® Brand or Chihuahua® Brand Mexican Sour Cream from V&V SUPREMO®
4 Steps to complete

1Preheat a medium saucepan over medium heat for 1 minute. Remove the plastic casing from the chorizo and cook for 6 minutes, breaking into crumbles while it cooks.

2Add onions and garlic. Cook for 2 minutes. Add the beans, tomatoes, vegetable stock, salt, bay leaf, and stir. Cover and simmer over medium-low heat for about 15 minutes.

3For the cheese: Preheat a nonstick skillet or a griddle over medium heat for 2 minutes. Cut the Cotija cheese wedge in half lengthwise, place the two halves in the skillet and sear each side for 30 seconds. When done, cut each slice lengthwise, then into small cubes.

4Remove bay leaf. Serve the soup and top each serving with sour cream and Cotija cheese. Enjoy!
