    Preheat a medium saucepan over medium heat for 1 minute. Remove the plastic casing from the chorizo and cook for 6 minutes, breaking into crumbles while it cooks.

    Add onions and garlic. Cook for 2 minutes. Add the beans, tomatoes, vegetable stock, salt, bay leaf, and stir. Cover and simmer over medium-low heat for about 15 minutes.

    For the cheese: Preheat a nonstick skillet or a griddle over medium heat for 2 minutes. Cut the Cotija cheese wedge in half lengthwise, place the two halves in the skillet and sear each side for 30 seconds. When done, cut each slice lengthwise, then into small cubes.

    Remove bay leaf. Serve the soup and top each serving with sour cream and Cotija cheese. Enjoy!
