¼ cup white onion, small dice

1 garlic clove, crushed

½ lb. ground beef 80/20

¼ tsp. Kosher salt

¼ tsp. ground black pepper
-
¼ tsp. garlic powder
-
1 cup red potato, small dice
-
¾ cup carrot, small dice
-
1 (8 oz.) can tomato sauce
-
2 Tbsp. tomato paste
-
1½ cups unsalted vegetable stock
-
1 bay leaf
-
¾ cup frozen green peas
-
1 small bunch cilantro

½ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
4 Steps to complete

1Preheat a medium pot for 1 minute over medium heat; add chorizo and cook for 3 minutes while crumbling chorizo with a spoon. Add onion and garlic, cook for 1 minute, add ground beef, salt, black pepper, garlic powder, and cook for 3 minutes while crumbling ground beef with a spoon.

2Add potatoes, carrots, cover, and cook for 3 minutes.

3Add tomato sauce, tomato paste, vegetable stock, bay leaf, frozen peas, and cilantro. Cover, reduce heat to low, and simmer for 5 minutes or until potatoes are tender.

4Remove cilantro and bay leaf. Serve Chorizo & Ground Beef Stew with sour cream, and enjoy!
