Crispy Potato & Cheese Tacos with Coleslaw are a wonderful duet that will delight you! Their combination is unexpectedly delicious! These tacos are unbelievable and great for dinner!
Ingredients
Lime Coleslaw

1½ cups green cabbage, shredded

1½ cups purple cabbage, shredded

1 cup roma tomato, cut into 4, de-seeded, and thinly sliced

1/3 cup white onion, chopped
-
¼ cup cilantro, chopped
-
3 Tbsp. fresh lime juice
-
¼ tsp. + ⅛ tsp. ground black pepper or to taste
-
½ tsp. + ⅛ tsp. kosher salt or to taste
-
½ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
-
¾ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®

1Lime Coleslaw: In a medium bowl combine green & purple cabbage, tomato, lime juice, cilantro, onion, sour cream, cheese, salt, and pepper. Mix until well combined. Place in the refrigerator until ready to serve.

2Mashed potato: In a medium sauce pot combine water and butter; bring to a boil (approx. 3 min). Add salt, garlic powder, black pepper, sour cream, potato flakes, and Chihuahua® cheese. Stir until well combined and cheese is melted; slightly cool.

3Warm tortillas in a microwave for 1 minute or until soft. Fill each tortilla with about 3 Tbsp. of potato and cheese mixture.

4Preheat a wide sauté pan with ¼ cup of vegetable oil over medium heat for 2 minutes.

5Fry each side of the potato tacos for 1½ min.

6Remove from pan and place on a tray lined with paper towel to drain excess oil.

7Serve warm with about 2 Tbsp. of lime cole slaw inside each taco and enjoy!
