Cucumber salad with dill is a creamy and tasty side dish sure to taste refreshing with any meal.
Ingredients
- 2 Tbsp. fresh lime juice
- ¾ tsp. salt
- ¼ tsp. fresh ground black pepper
- 15 oz. Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
- ½ cup chopped fresh dill
- ½ large sweet onion, sliced thin
- 2 seedless cucumbers, sliced in thin "half moons"
- 1 wedge (about ¼ lb.) Sierra® Brand Cotija Cheese from V&V SUPREMO®, shaved

- 1In a medium bowl whisk together lime juice, salt, and black pepper until salt dissolves. Add sour cream and dill. Mix well.
- 2Add onions and cucumbers. Mix together.
- 3Mix in ½ cup of shaved Cotija Cheese.
- 4Preheat a skillet or griddle over medium heat for 1 minute.
- 5In a small bowl, combine garlic and olive oil. Whisk together.
- 6Spread pita bread with olive oil. Warm pita bread on the griddle for 30 seconds on each side. Cut each pita into 4 pieces.
- 7Divide the salad into 8 portions. Garnish each salad with the remaining Cotija Cheese. Accompany with pita bread on the side.
