Cucumber salad with dill is a creamy and tasty side dish sure to taste refreshing with any meal.
Ingredients

2 Tbsp. fresh lime juice

¾ tsp. salt

¼ tsp. fresh ground black pepper

15 oz. Supremo® Brand Mexican Sour Cream from V&V SUPREMO®
-
½ cup chopped fresh dill
-
½ large sweet onion, sliced thin
-
2 seedless cucumbers, sliced in thin "half moons"
-
1 wedge (about ¼ lb.) Sierra® Brand Cotija Cheese from V&V SUPREMO®, shaved

1In a medium bowl whisk together lime juice, salt, and black pepper until salt dissolves. Add sour cream and dill. Mix well.

2Add onions and cucumbers. Mix together.

3Mix in ½ cup of shaved Cotija Cheese.

4Preheat a skillet or griddle over medium heat for 1 minute.

5In a small bowl, combine garlic and olive oil. Whisk together.

6Spread pita bread with olive oil. Warm pita bread on the griddle for 30 seconds on each side. Cut each pita into 4 pieces.

7Divide the salad into 8 portions. Garnish each salad with the remaining Cotija Cheese. Accompany with pita bread on the side.
