1 Tbsp olive oil

½ medium white onion, sliced

½ green bell pepper, thinly sliced

½ red bell pepper, thinly sliced

¼ tsp ground black pepper

¼ tsp salt

12 slices deli roast beef, torn

4 flour tortillas, 6 inch

1 cup Shredded Chihuahua® Brand Quesadilla Cheese V&V SUPREMO®

1Preheat a pan over medium heat for 1 minute. Add olive oil and heat for an additional minute. Add onion and sauté for 1 minute. Then, add the peppers and cook for 3 minutes. Add salt and pepper. Mix in the roast beef with the rest of the ingredients and continue to cook for 2 minutes. Remove from heat.

2Preheat a skillet or griddle for 1 minute over medium-low heat. It is important that the skillet temperature is not too high, so that the tortillas do not harden or overcook before the cheese fully melts. Heat tortillas for 30 seconds, flip them and add ¼ cup Chihuahua® cheese over each tortilla. Layer the roast beef preparation over the cheese. Fold tortilla in half and flip occasionally until quesadillas are golden brown on each side and cheese has melted. Serve and enjoy!
