Pico de Gallo
- 2 cups roma tomato, seeded and diced
- ½ cup white onion, chopped
- ½ cup cilantro, chopped
- 1 ½ Tbsp. lime juice
- 1 Tbsp. serrano pepper, seeded & minced
- ½ tsp. kosher salt

7 Steps to complete
- 1Pre-heat conventional oven to 350°F.
- 2Pico de Gallo: In a small bowl, combine tomato, onion, cilantro, lime juice, serrano pepper, salt, and set aside.
- 3Heat a 12-inch cast iron pan for 2 minutes on medium heat. Add chorizo, break up chorizo with a spoon and cook for 10 minutes. Remove from pan and turn off heat.
- 4In the same skillet, place about 24 chips onto the bottom of the skillet then add half the amount of cooked chorizo, half of the black beans, sprinkle 1½ cups Chihuahua® cheese on top.
- 5Add another layer of chips (24) on top, add remaining chorizo, and beans, top with 1¾ cups of Chihuahua® cheese.
- 6Place skillet in oven and bake for 20 minutes.
- 7Top skillet with ¼ cup sour cream, ¼ cup pico de gallo, and ¼ cup jalapeños. Serve and enjoy with remaining ingredients on the side!
