    Pre-heat oven to 400°F.

    Wash and cut potatoes in wedges (6 wedges per potato).

    In a medium bowl combine potato wedges, garlic, 3 Tbsp. olive oil, oregano, red pepper flakes, rosemary, ¼ cup Cotija cheese, black pepper, and salt.

    Toss all ingredients in the bowl and transfer seasoned potatoes onto a non-stick sheet tray. Scrape the bowl and add remaining ingredients on top of the potatoes. Roast potatoes for 18 minutes.

    Remove from oven. Drizzle 1 Tbsp. of olive oil, ¼ cup + 1 Tbsp. Cotija cheese, and 1 Tbsp. parsley on top of the potatoes and toss to coat. Place potatoes back into the oven for 2 minutes. Serve warm and enjoy!
