The fragrant blend of rosemary, garlic, and oregano combined with roasted potatoes will make this your new classic side dish.
Ingredients

1 lb. red potatoes

3 tsp. fresh garlic, minced

3 Tbsp. + 1 Tbsp. olive oil (separated)

¼ tsp. dried oregano
-
⅛ tsp. red pepper flakes
-
½ tsp. dried rosemary
-
½ cup + 1 Tbsp. Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
-
⅛ tsp. ground black pepper
-
⅛ tsp. kosher salt

1 Tbsp. fresh parsley, chopped
5 Steps to complete

1Pre-heat oven to 400°F.

2Wash and cut potatoes in wedges (6 wedges per potato).

3In a medium bowl combine potato wedges, garlic, 3 Tbsp. olive oil, oregano, red pepper flakes, rosemary, ¼ cup Cotija cheese, black pepper, and salt.

4Toss all ingredients in the bowl and transfer seasoned potatoes onto a non-stick sheet tray. Scrape the bowl and add remaining ingredients on top of the potatoes. Roast potatoes for 18 minutes.

5Remove from oven. Drizzle 1 Tbsp. of olive oil, ¼ cup + 1 Tbsp. Cotija cheese, and 1 Tbsp. parsley on top of the potatoes and toss to coat. Place potatoes back into the oven for 2 minutes. Serve warm and enjoy!
