1 Tbsp extra virgin olive oil

2 Tbsp. onion, minced

1½ Tbsp. shallot, minced

1½ Tbsp. garlic, minced

1 Tbsp. fresh thyme, minced

2 Cups Supremo® Brand Mexican Sour Cream from V&V SUPREMO®

2 Cups frozen green peas
-
3 Tbsp. Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
-
1½ Tbsp. unsalted butter
-
½ tsp. kosher salt

1 tsp. ground white pepper
3 Steps to complete

1Preheat a medium saucepan over medium heat for 1 minute. Add the olive oil and heat for an additional minute. Add the onion, shallot, garlic, and thyme. Cook, stirring frequently, and until translucent, approximately 8 minutes.

2Reduce the heat to low. Whisk in Supremo® Brand Mexican Sour Cream from V&V SUPREMO®, bring to a simmer for 3 minutes. Add the peas and cook for 5 minutes or until peas are tender but not overcooked.

3Carefully place mixture in blender. Remove center of lid from blender and place a kitchen towel over the top to allow steam to escape. Puree the coulis for 3 minutes, strain over the saucepan. Add Grated Sierra® Brand Cotija Cheese from V&V SUPREMO® Season with salt and pepper. Add the butter and whisk for 2 minutes or until the butter fully melts and the coulis has a glossy appearance on the surface. Enjoy!
