Grilled Caribe® Cheese Soup is a uniquely flavored vegetarian soup that is hearty & satisfying. Creamy vegetable soup is finished with spicy poblano peppers and deliciously grilled Caribe® cheese.

½ lb. Del Caribe® Brand Queso Blanco Cheese from V&V SUPREMO®

1 Tbsp. vegetable oil

½ cup white onion, fine dice

3 garlic cloves, crushed

2 medium red potatoes, skin-on, medium dice
-
2 poblano peppers roasted, peeled, seeded, deveined and cubed

¼ tsp. ground white pepper

¾ tsp. Kosher salt

1 (15 oz.) Supremo® Brand Mexican Sour Cream from V&V SUPREMO®

1 ½ cups vegetable broth

2 Tbsp. cilantro, rough chop

1Preheat a skillet or nonstick griddle for 2 minutes over medium high heat. Slice Caribe® cheese into 8 strips. Sear cheese for 30 seconds on each side. Remove from heat, cool for 5 minutes, and dice into medium cubes. Set aside until needed.

2Preheat oil in a medium pot for 1 minute over medium-high heat. Sauté onion for 1 minute. Add garlic and cook for 30 seconds. Add potatoes, cover the pot, and cook for 8 minutes. Add poblano peppers, salt, black pepper, sour cream, vegetable broth, and bring to a boil. Cover, reduce heat to medium-low, and simmer for 8 to 10 minutes, or until potatoes are tender. Add grilled Caribe® Cheese and simmer for 1 to minute or until cheese is warmed through. Garnish soup with chopped cilantro.
