Ingredients

3 Tbsp. canned chipotle salsa

3 Tbsp. pineapple juice

2 tsp minced garlic
-
1 tsp grapeseed oil
-
½ tsp salt
-
2 boneless pork chops, cut into thin strips

1 Tbsp. vegetable oil
-
½ large sized yellow onion, round slices
-
4 corn tortillas
-
¼ cup Supremo® Brand Mexican Sour Cream from V&V SUPREMO®

1 (4 oz.) pkg. V&V SUPREMO® Brand Queso Fresco Cheese, crumbled

¼ cup freshly chopped cilantro

1In a medium sized bowl, combine chipotle salsa, pineapple juice, garlic, grapeseed oil, salt and mix. Add the pork strips and mix well, making sure the marinade is coating the meat. Marinate for 30 minutes in the fridge.

2Crumble Queso Fresco cheese into a bowl. Set aside.

3Preheat a cast iron skillet with grilled marks for 2 minutes. Add vegetable oil and heat for 1 minute.

4Add onions and sauté for 4 minutes. Add marinated pork and cook for 3 minutes on each side. Mix in the onion with the pork meat. Divide mixture into 4 portions.

5Heat the tortillas on a gas stove burner on the medium setting, place a tortilla directly on the burner and heat for about 30 seconds on each side. Place them onto a towel to keep them warm.

6Place one portion of pork and onion mixture onto one tortilla. Drizzle sour cream. Sprinkle crumbled Queso Fresco cheese on top and garnish with chopped cilantro. Enjoy!
