½ zucchini, ¼-inch lengthwise slices

½ yellow squash, ¼-inch lengthwise slices

½ red onion, 1-inch half-moon slices
-
½ ½ red bell peppers, ½-inch strips

1 tsp garlic, crushed

1½ Tbsp olive oil, divided
-
1/8 tsp Kosher salt
-
¼ tsp ground black pepper

1 (12.7 oz) pkg Corn Huaraches from V&V Supremo®

2 cups Shredded Chihuahua® Brand Quesadilla Cheese from V&V SUPREMO®

½ cup Grated Sierra® Brand Cotija Cheese from V&V SUPREMO®
6 Steps to complete

1Preheat oven to 400F.

2In a large bowl; combine yellow squash, zucchini, red peppers, red onion, garlic, 1 tablespoon olive oil, salt, and pepper. Toss to evenly coat vegetables.

3Brush cast-iron grill pan with remaining ½ tablespoon oil and preheat for 3 minutes over medium-high heat. Grill vegetables for 1 to 2 minutes on each side or until lightly charred. Let vegetables cool for 3 to 5 minutes, cut grilled vegetables into 1-inch chunks, and toss together. Set aside until needed.

4Place huaraches on an oven-safe tray, bake for 1 to 2 minutes, flip huaraches, and bake for an additional 1 to 2 minutes or until huaraches are lightly warmed and softened.

5Remove huaraches from oven and evenly top each with ½ cup Chihuahua® cheese. Bake for 8 to 9 minutes, or until cheese is melted and golden.

6Divide grilled vegetable mixure evenly to top baked huaraches. Garnish each Grilled Vegetable Huarache with 2 tablespoons grated Cotija cheese, serve, and enjoy!
